Golden Grilled Chicken with Savory Stuffing

Instructions
For the Chicken Marination

For the defrosted chicken (without defrosting in water)
Defrost the chicken overnight without putting it in water.

Once fully defrosted, wash well without removing the skin. Drain well.

Take 1 Maggi cube, required amount of pepper (be lavish) & very less salt (only if required). Mix well.

Apply on the chicken well inside and outside.

Refrigerate for 1-2 hours

Take melted butter & apply over the chicken. (start with the back side to avoid losing marination while flipping chicken)

Sprinkle pepper over the chicken.

Apply Soya sauce over the chicken

Cover it completely in tinfoil

Refrigerate for 2 hours.

Follow the instructions below for the filling
Chicken Filling

For the chicken filling
Fry the chopped onion, sliced sausages, sliced mushrooms

Add pepper & salt as needed
-
Add little tomato ketchup. Sauté nicely.

Add spring onion, parsley & the sliced boiled egg white
-
Mix this mixture well and keep aside

Toast the bread slices and cut into large square pieces
-
Take 2 tbsps. of the mixture and fill it into the stomach of the chicken, then insert 2 squares of the bread to hold the mixture in. Repeat this step till the stomach is quite full.

Now stitch the ends of the stomach using a thread and needle to hold the filling in place.

Tie the tips of the chicken legs together so that the filling is well-tightened in the middle.
Grilling the stuffed chicken

After inserting the filling and tying the chicken in place
Preheat the oven to 180 C.

Keep the chicken well covered in the same tinfoil/baking dish. Ensure there are no holes in the tinfoil to avoid any heat/ air to escape.

Bake the chicken for about 45 minutes / till it well cooked. (To know if the chicken is well cooked - poke into the breast of the chicken a little - it should ooze butter and water, indicating it is well cooked. Using a meat thermometer, the temp should be about 75 C)

Broil the chicken for about 5 mins (using the top fire of the oven) to brown the top portion of the chicken.
