Instructions for chicken stock

Boil 450 g of the chicken thighs to make the stock.

Once the stock is prepared. Shread the chicken pieces and keep aside.
Instructions for the Soup

Melt the butter and sauté the onion and mushrooms for 5 minutes approx.

Stir in the flour and cook for 2 minutes adding the stock and milk. Stir well and bring it to boil.

Add the shredded chicken pieces to this sautéed mixture.

Season it well. Cover and simmer it for 20 minutes.

Take some of the mushroom pieces from the mixture and blend it. Then add it back to the previous step.

Stir in the cream and heat gently.

Garnish with chopped parsley and stir gently to blend it in. Finish by decorating the dish with a fresh sprig of whole parsley.
