Beef Ularthu | ബീഫ് ഉലർത്ത് | Beef Roast
Description
Beef Ularthu / Ularthiyathu (Kerala Beef Fry) is a signature South Indian dish where tender beef chunks are slow-roasted with aromatic spices, fresh curry leaves, and crunchy thenga kothu (coconut slivers). This dark, spicy, and deeply flavorful roast is a must-try for any lover of authentic Kerala cuisine.

Fry onion and beef until the water is drained and turns light brown. Also add the small piece of solid asfoetida (കട്ട കായം - katta kayam in malayalam)

Add garlic ginger paste & continue to saute.

Add the coriander powder, chilli powder, peru jeerakam, garam masala, and some pepper. Saute everything well.

Add little hot water if it feels very dry, and fry well till oil comes up.

Add curry leaves, 1/4 cup coconut pieces (തേങ്ങാക്കൊത്ത് - thenga kothu in malayalam). Cook in the cooker. Ready to serve as Beef Curry.

For Beef Ularthiyathu
Add little peru jeerakam, some pepper & fry till the curry evaporates & becomes a dark brown dry consistency. (Can leave it as semi gravy if preferred)
